Thin Crust Mediterranean Pizza

I met up with two of my friends and made pizza and drank some wine. The left overs were amazing. The company was amazing. First successful pizza and friends night for sure! 

Ingredients:
Thin crust pizza (bought from Whole Foods)

Two large tomatoes

One container of mushrooms

Prewashed spinach leaves (I just took them from my salad mix)

Two large avocados

One Mozzarella ball

One container of pesto.

Olive oil, balsamic vinegar salt and pepper to taste. 

Directions:

Preheat oven to 375

Spread pesto on top of dough.

Layer spinach leaves, tomatoes, mushrooms together. Finish off with chunks of mozzarella. 

Bake 7-10 minutes or until edges look light brown and crispy. 

Add olive oil, balsamic, salt, pepper, and chunks of avocado to taste.
